Where to Eat

Thai foods are great because we use varieties of natural ingredients. Curries tend to be quite hot with chili but it is good to your health with a special taste from coconut milk. The use of herbs and spices makes Tom Yum Koong (hot and sour prawn soup) the world favorite dish.

Hot and Sour Prawn Soup : Serves 4

1 kg (2 lb 4 oz) medium raw prawns (shrimp)

1 tablespoon oil

2 tablespoons tom yum paste

2 stems lemon grass (white part only), bruised

4 makrut (kaffir) lime leaves

3 small red chillies, thinly sliced

80-100 ml fish sauce

80-100 ml lime juice

2 teaspoons grated palm sugar or soft brown sugar

4 spring  onions (scallions), thinly sliced on the diagonal

4 tablespoons coriander (cilantro) leaves

Peel and devein the prawns, leaving the tails intact. Reservee the prawn shells and heads. Cover the prawns and refrigerate.

Heat a work over high heat, add the oil and swirl to coat. Cook the prawn shells and heads over medium heat for about 8-10 minutes, or until they turn orange.

Add the tom yum paste and 60 ml (1/4 cup) water and cook for 1 minute, or until fragrant. Add 2.25 litres (9 cups) water, bring to the boil, then reduce the heat and simmer for 20 minutes. Strain into a large bowl, discarding the prawn shells and heads. Return the stock to the wok.

Add the prawns, lemon grass, lime leaves and chilli and simmer for 4-5 minutes, or until the prawns are cooked. Stir in the fish sauce, lime juice, sugar, spring onion and coriander. Discard the lemon grass and serve immediately.

How to:
Cooking instant noodle

Normally, how we cook  the instant noodles is to put the noodles into a pot with water, throw in the  powder and let it cook for 3 around  mins and then ready to  eat.

This is the WRONG  method of cooking the instant noodles.

By doing this, when we  actually boil the ingredients in the powder, normally with MSG, it will change  the molecular structures of the MSG causing it to be  toxic. The other thing that you may or may not realized is that, the noodles are  coated with wax and it will take around to 5 days for the body  to excrete the wax after you have taken the noodles.

So the CORRECT method,  which you may or may not know, is to cook the noodles this way  ?

1. boil the noodles in  a pot with water.
2. once the noodles is  cooked, take out the noodles, and throw away the water which contains  wax.
3. boil another pot of  water till boiling and put the noodles into the hot boiling water and then shut  the fire.
4. only at this stage  when the fire is off, and while the water is very hot, put the ingredient with  the powder into the water, to make
noodle soup.
5. however, if you need  dry noodles, take out the noodles n add

The ingredient with the  powder and toss it to get dry noodles.

Hope this piece of  information is of importance to your health in relation to eating instant  noodles and please apply this cooking method with immediate  effect.
